Storing a SCOBY Hotel
With a cloth cover; the liquid will evaporate more quickly and you will need to check it more frequently but a new SCOBY will form to slow the evaporation process. With a lid; plastic lids work best.
How long is a scoby hotel good for?
Once the SCOBYs are dehydrated, place them in a sealable plastic bag and store them in the refrigerator (not the freezer). Dehydrated SCOBYs will generally survive in the refrigerator for at least 3 months. Once you are ready to begin making kombucha again, follow our instructions on how to rehydrate the SCOBY.

- It will probably take 2 to 4 weeks for your SCOBY to form.

Wait until the scoby is a ¼ inch thick before using it to brew your first batch of kombucha. This should take about 30 days. If you don’t see a SCOBY forming after 3 weeks, throw the batch out and start over.

The simplest way to fix that is to run it through a coffee filter. Now that you have both the scoby and the starter liquid ready for action, all that’s left is to make a batch of sweet tea. Don’t use anything fancy here because it will only get in the way. Brew with cheap bags of black tea and regular old table sugar.

To keep the kombucha culture fed and submerged, top off the hotel with sweet tea every month or two (or when needed). You can also drain off the older kombucha in the hotel and use it as a strong starter tea for new batches of kombucha or as kombucha vinegar. A SCOBY will form at the top and might seal up the jar.
